How to use red chilli paste
Ideas for using Cooker Master red chilli paste every day, and how much to add.
How much should I add?
Start with about half to one teaspoon for a dish that serves two to four people. Stir it in, wait a minute, then taste. Add more if you want it hotter. Paste is concentrated, so it is easy to add more and hard to take out.
Ways to use it
Karahi and curries
Add a spoon to the masala after the onions, garlic and tomatoes have cooked down.
Marinades
Mix with yoghurt, lemon juice and salt, rest the meat, then grill, bake or fry.
Chutneys and dips
Blend with yoghurt, mint or tomato for a quick chutney.
Biryani and pulao
Stir a small spoon into the masala layer for colour and heat.
Noodles and fried rice
Add toward the end of cooking, then toss.
Sandwiches and rolls
Spread thinly or mix into mayonnaise or yoghurt.
Tips
Use a clean, dry spoon each time you take paste from the jar. Close the lid after use and follow the storage instructions on the label. Use the jar within 1 to 1.5 months.
